PURPOSE:3-Methyl-2-cyclohexen-1-one as a starting material is epoxidized and isomerized under acidic conditions to achieve high yield production of the titled compound used as a flavor component through shortened-stages and simple operations. CONSTITUTION:3-Methyl-2-cyclohexene-1-one is allowed to react with hydrogen peroxide in an alkaline solution containing sodium hydroxide or potassium carbonate to form 3-methyl-2,3-epoxycyclohexanone. Then, the product is stirred in acidic aqueous solution containing sulfuric or acetic acid to effect isomerization to give a compound of formula III. The acidic aqueous solution has a concentration of 0.1-10% and the amount used is 1-10 times that of the reactant. The reaction temperature is room temperature to 100 deg.C, further at 90-100 deg.C. The concentration of the above aqueous alkali is usually about 1-10% and the amount is 1/20-1/10 of that of the material of formula I .
