PURPOSE:To prepare artificial truffle having a taste and appearance extremely resemble to natural truffle by using sodium alginate as a main raw material, molding it into a shape like natural truffle, replacing sodium with calcium. CONSTITUTION:Sodium alginate is blended with protein such as soybean protein, the white, etc., starch such as cyclodextrin, etc., and, if necessary, a very small amount of element such as garlic extract, coloring matter, etc., the blend is kneaded with water, molded into a shape like truffle to give a molded material, which is immersed in an aqueous solution of soluble calcium salt such as 3wt% aqueous solution of calcium lactate for about 20hr, cured, it is immersed in a seasoning solution which is prepared by properly blending seasoning with spice. |
