摘要 PURPOSE:To produce a kneaded preservable food, obtained by using a drink or food, e.g. fruit, vegetable or cow's milk, which has usually no keeping quality as a raw material, and eatable at any time with the retained original flavor, taste and color, etc., and preservable for a long period in a soft state. CONSTITUTION:One or two or more selected from fruit, vegetable, grain, seaweed, animal milk, a processed food thereof, cola, drink, carbonated drink, lactic acid bacterium, and chocolate, etc. are formed into a saucelike fluid material or powdery material, and thick malt syrup, sugar and if necessary citric acid are added thereto. Water is then added to the resultant mixture, and boiled down to 100-110 deg.C not to burn. Thus, a concentrated fluid material is obtained. An aqueous solution of a coagulating agent, e.g. agar, is heated separately, and warmed not to harden by cooling to prepare a coagulating solution at a high temperature, which is then mixed with the above-mentioned concentrated fluid material. The resultant mixture is then cast into a mold, allowed to cool and coagulated into a slightly tacky flexible state.
