PURPOSE:In the production of cyclodextrin by means of an enzyme, a specific oxygen-containing organic compound is added to achieve marked increase in the yield of cyclodextrin. CONSTITUTION:In the production of cyclodextrin in which various kinds of starch and processed starch are used as a starting material and cyclodextrin glycosyltransferase is made to act thereon, preferably high concentration of starch milk is used and more than 5% preferably about 10-70%, based on the starch, of a compound selected from aliphatic alcohols of 1-8 carbon atoms except ethanol, aliphatic ether, esters and ketones of 2-4 carbon atoms are added to the starting materials, preferably in the stage 1hr after the time when the enzyme has been allowed to act.
