PURPOSE:To make it possible to sterilize a raw gluten without deteriorating the paste property thereof, by sterilizing the raw gluten under acidic conditions, cooling the sterilized gluten, and neutralizing the cooled gluten. CONSTITUTION:A raw gluten is acidified and adjusted to <=4.5pH, heated at >=100 deg.C and sterilized, cooled to <=55 deg.C and then neutralized. Thus, the raw gluten can be sterilized without deteriorating the paste property thereof.
