Fermentation process for the preparation of aconitic acid.

Aconitic acid is prepared by propagating an aconitic acid accumulating strain of Aspergillus itaconicus or Aspergillus terreus under aerobic conditions, in an aqueous carbohydrate-containing nutrient medium in which aconitase production is not inhibited, until significant quantities of aconitic acid have accumulated in the medium, and then recovering the aconitic acid or a salt thereof from the medium. The preferred strain is Aspergillus terreus M141 (CMI CC 281924).
