PURPOSE:To obtain an odorless and white protein ingredient from which lipid in fish meat is sufficiently extracted and removed, by bringing a mixed solution of a hydrophilic organic solvent and an acid at >= a specific temperature into contact with an aquatic animal. CONSTITUTION:A mixed solution of a hydrophilic organic solvent such as ethanol, etc. and an acid such as hydrochloric acid, etc. at >=70 deg.C is brought into contact with a raw material of an aquatic animal such as sardine, mackerel, etc., so that lipid in the fish meat is sufficiently extracted and removed, to give an odorless and white protein ingredient. In times of contact action, when the raw material has high content of lipid, contact treatment of about 1hr is preferably repeated 2-4 times. When the raw material has low content of lipid, contact treatment of about 1hr is carried out once and it is enough.
