PURPOSE:To produce powdery WASABI (Japanese horseradish) with little loss of the sharp tang of the WASABI, and having the characteristic taste and flavor of raw WASABI, by adding a small amount of sulfur-containing vegetable to the vacuum-dried and pulverized raw WASABI. CONSTITUTION:The root, leaf or stalk of raw WASABI is washed and cut to small pieces. The leaf or stalk is immersed in the hot water of 80-100 deg.C for 30-90sec. The root and the treated leaf or stalk are dried in vacuum, and pulverized. 100pts.wt. of the resultant powder is added with 2-6% powder of sulfur-containing vegetable such as radish, rape, mustard, etc. |
