PURPOSE:To prepare powder of lemon juice not damaging vitamins and taste at all even if it is preserved for about one year, by adding sugar, etc. to lemon in a pasty state, blending them at low speed for a given time, drying, and grinding them. CONSTITUTION:Washed lemons together with pericarp are cut, fed to a mixer, made into a pasty state, blended with a proper amount of sugar and L-ascorbic acid as an acidity enriching agent with adding them by a blender for a given time at 10-25rpm, preferably 15-20rpm, dried in a drying chamber at 35-60 deg.C, preferably at 40-55 deg.C, ground into powder, and packed hermetically. |
