PURPOSE:To improve the efficiency of concentration operation, by cooling the liquid to be concentrated with a cooling cylinder, transferring the ice crystals formed on the inner wall surface of the cooling cylinder to a compression zone with a spiral blade, and separating into concentrated fruit juice and ice crystals. CONSTITUTION:The pipe 16 for feeding the liquid to be concentrated is con nected to one end of the cooling cylinder 14 furnished with the evaporator 12 of a refrigeration system, and a spiral blade 20 is attached rotatably in the cooling cylinder 14. An ice crystal compression zone 24 to compress the ice crystals frozen from the liquid and formed on the inner wall surface of the cylinder is attached to a part of the cooling cylinder 14, and the ice crystal compression zone 24 is furnished with the outlet port 28 of the concentrated liquid separated from the ice crystals. The outlet port 32 of the compressed ice crystals is attached to the other end of the cooling cylinder 14. The effi ciency of the concentration operation can be improved in the present liquid concentration apparatus compared with conventional freeze concentration appara tus, and furthermore, the size of the apparatus can be reduced and the mainte nance can be facilitated.
