PURPOSE:To produce dried egg powder having improved gel strength, efficiently and economically, by treating dried egg powder having a specific water-content at a specific temperature under pressure using an extruder. CONSTITUTION:The objective dried egg powder having improved gel strength can be produced efficiently, at a low cost, in a short time, without necessitating a large-sized hot chamber, etc., by heat-treating dried egg powder having a water- content of <20% at 70-120 deg.C under pressure using an extruder. The gel strength of dried egg powder is defined by the stiffness of the coagulation product obtained by reconstituting dried egg powder with water, and heating the solution.
