PURPOSE:To suppress evaporation of water from bivalves, by removing one of the shell from each bivalve in such a way that the bivalve is left in the other, immersing the opening parts of the shells of the bivalves in salt water in a container so that the shells having the bivalves are above the bivalves, freezing and preserving the container. CONSTITUTION:One of the shell 2a of each of the bivalve 2 is removed from the other shell 2b in such a way that the meat 2c of the bivalve is left in the other shell, the shells 2b having the meat of the bivalves are put in the given container 6, immersed in salt water 8 in a relationship of position to make the shells 2b on the meat 2c of the bivalves and the opening parts of the shells 2b are immersed, and the container 6 is frozen and preserved. Consequently, evaporation of water from the meat of the bivalves themselves is suppressed, and the bivalves can be restored to an original state to have appearance, steric feeling and taste almost similar to raw bivalves. |
