PURPOSE:To obtain frozen cuttlefish for easily edible steak with flavor of beef inexpensively, by unfolding a raw large ommastrephes bartrami, taking skin from it, washing, drying it, making a great number of cuts on the surface of it, immersing it in a seasoning containing extract of beef, freezing it. CONSTITUTION:The raw large ommastrephes bartrami 1 is opened, legs and internal organs are removed, sufficiently washed with water, the thick skin 2 on the surface is peeled, rewashed with water, dried with cool air, and dehydrated. Then it is made into a proper size, and the cuts in a slant lattice shape to about 5mm. depth are made on the surface, so that penetration of seasoning is promoted, and the hard layer 5 on the surface of meat 4 is made easily edible. The meat 4 with the cuts 3 is immersed in seasoning containing extract of beef, and, if necessary, salt, sugar, sodium glutamate, Guinea pepper, etc. for about 10hr, and rapidly frozen, to give the desired frozen cuttlefish for steak with flavor of beef. |
