摘要 PURPOSE:To provide the titled protein-rich health food having high acidity and low salt content, without lowering the flavor and the taste of brewed vinegar, by impregnating brewed vinegar in dried bean curd, and drying at normal temperature or low temperature. CONSTITUTION:A piece of dried bean curd which is a protein-rich porous absorbing food is immersed in brewed vinegar to impregnate the brewed vinegar in the porous spaces of the dried bean curd and to neutralize and fix the acid component. The product is dried at normal temperature or a low temperature so as to prevent the lowering of the flavor and taste of the brewed vinegar impregnated in the processed dried bean curd, and the dried product is if necessary pulverized to obtain the objective protein-rich powder containing the brewed vinegar having high acidity. The protein-rich health food has the characteristic flavor and taste of the brewed vinegar, contains large amount of protein and basic calcium which are the components of the bean curd, and enables the ready taking of brewed vinegar having high acidity. Accordingly, it is extremely excellent as a health food having extremely high nutrient value and free from a large amount of Na in contrast with the conventional brewed vinegar. It can be produced by a simple process, and accordingly at a remarkably reduced cost.
