PURPOSE:To provide the titled removing agent containing an aminopolysaccharide as an active component, and capable of selectively and effectively removing the mutagenic substance from alcoholic drinks with little deterioration of the characteristic taste and flavor of the alcoholic drinks. CONSTITUTION:The objective agent for removing mutagenic substance from alcoholic drinks such as whisky, beer, wine, etc. contains various aminopolysaccharides such as natural chitin which is a crust component of aquatic crustacean and insect or a cell wall component of algae and bacteria, chitosan which is the N-deacetylated chitin, various N-acylchitin, or heparin (derivative) immobilized to cellulose, etc. as active component. The amount of the removing agent to be used per 100ml of an alcoholic drink is usually about several mg- several g. When the removing agent is made to contact with an alcoholic drink for a definite time interval, the mutagenic substance existing in the drink can be selectively and effectively adsorbed and removed with little deterioration of the characteristic taste and flavor of the original alcoholic drink. |
