This device allows a uniformly distributed pressing for a large number of cheeses during manufacture, while facilitating turning over. Superposed plates 1 contain openings 4 arranged so as to correspond. A cheese mould 7 is fitted in each opening 4, with the possibility of sliding vertically. Each mould 7 has retaining means 8, 9 situated above and below the corresponding plate 1. A cap 10 closes off each mould 7 and is supported against the base of the mould 7 placed in the opening 4 of the plate immediately above, so as to form pressing columns which are independent of each other. This pressing device applies more particularly to the manufacture of "partially pressed soft cheeses". <IMAGE>
