PURPOSE:To obtain the titled food having excellent appearance and fresh feeling, without causing the deterioration of the quality, either by using ham, sausage and the like coated with a specific substance such as carrageenan, etc. as a raw material of the food, or by forming the food as a whole with said material. CONSTITUTION:The surface of ham, sausage and the like is coated with a substance selected from carrageenan, gelatin, agar and tamarind gum, and the coated ham, etc. is mixed with a cooked food having a pH of <=5.5, e.g. salad, marinade, etc. As an alternative method, the objective food is produced by forming the cooked food having a pH of <=5.5 and containing ham, sausage, etc. using the carrageenan, etc. as binder. |
