PURPOSE:To produce the titled substance having low hygroscopicity and soluble easily in water, continuously, by concentrating a high-purity maltose liquid having low maltotriose content and obtained by the enzymatic treatment of liquefied starch, precipitating the primary crystal with seed crystal, spray-drying the liquid having a specific viscosity, and aging the obtained crystal under high temperature and humidity. CONSTITUTION:Liquefied starch having low degree of hydrolysis is hydrolyzed enzymatically to obtain a high-purity maltose liquid having a maltose content of >=90% and maltotriose content of <=2.5%. The liquid is concentrated to a solid content of 65-80%, and the primary crystal is crystallized in the presence of seed crystal at 25+ or -5 deg.C to a crystallization ratio of 50+ or -5%. If necessary, a proper amount of a maltose solution is added to the product to adjust the viscosity of the liquid to <=70,000cp at the crystallization temperature, and the mixture is spray-dried to obtain a powdery product having a water-content of 5.5- 7.5%. The powder is exposed to a high-temperature and humidity atmosphere (50-75 deg.C, 50-70% relative humidity and 45-185g-water/kg-dry air) to effect the crystallization, drying and aging of the product. |
