PURPOSE:To produce a banana chip having desired shape, easily, without causing the degradation and discoloration of the raw material, by stirring and kneading the pulp of banana, forming in the form of a chip, frying in an oil, and drying by heating with microwave radiation. CONSTITUTION:The pulp of peeled banana is optionally added with vitamin C and its stabilizer, stirred and kneaded to obtain pasty banana, preferably frozen, sliced in the form of chip, fried in an oil, and heated and dried with microwave radiation to obtain the objective banana chip. |
