PURPOSE:To produce the titled coagulant suitable for the enrichment of bean curd with calcium, by reacting calcium carbonate with acetic acid at a specific ratio, drying the reaction product completely, adding a specific amount of calcium chloride, and thoroughly kneading the mixture. CONSTITUTION:Calcium carbonate having extremely fine particle size is made to react with equivalent amount of acetic acid, dried completely, mixed with a specific amount (e.g. half of the whole composition) of calcium chloride, and mixed either with sucrose fatty acid ester to obtain a powdery coagulant or with propylene glycol to obtain a pasty coagulant. Preferably, the solution of the coagulant is mixed with a solution of sodium citrate at a ratio of 1:1 or 2:1, etc. |
