PURPOSE:To prepare calcium-enriched TOFU (bean curd) having high quality and improved taste, by using calcium citrate or calcium lactate as a calcium- enriching agent. CONSTITUTION:Calcium citrate is pulverized into <=6mu particle diameter, it and a coagulating agent such as calcium sulfate, etc. pulverized separately are suspended in water to give a colloidal solution which will not precipitate immediately, soybean milk is added to the suspension. Or, sodium citrate is added or not added to calcium lactate, which is processed into an aqueous solution of it, this solution is used with a coagulating agent such as calcium chloride, magnesium chloride, etc., and added to soybean milk. |
