PURPOSE:To produce an inexpensive and soft salted firefly squid guts having a mild taste and rich flavor, by incorporating raw flesh, arms and guts of a raw firefly squid as raw material with salt, sweet SAKE of KOJI and a preservative. CONSTITUTION:The flesh and arms of a raw firefly squid are cut, separated and mixed with the removed guts, and the resultant mixture is then incorporated with 5-18wt%, based on the above-mentioned material, salt and a small amount of sweet SAKE of KOJI and matured. A preservative having the inhibitory action on fermentation in a small amount is then incorporated therewith in a suitable period. The resultant salted firefly guts are soft and have a mild taste and rich flavor. The work process is simple and mass production can be carried out. All the materials of one firefly squid are used as the material for the salted firefly squid, and the production is easily carried out without any waste. |
