A method of extracting proteins from whey comprises acidifying the whey, heating the acidified whey at a temperature of from 90‹ to 100‹ C. and causing the heated, acidified whey to flow with moderate agitation or stirring thereof for a period of time sufficient to obtain the precipitation of the proteins therein, cooling the so treated whey to a temperature of 30‹ to 40‹ C., and separating the insoluble protein from the whey. The whey may be preheated to 90‹ C. before acidification. Agitation may be brought about by passage through a duct; the heating may take place in the duct. From 10 to 30 minutes is a suitable length of time for heating. |
