PURPOSE:To obtain a juice at a low cost, keeping the nutrient of the raw material, by immersing fruit, etc., in hot oil, dehydrating the fruit by reducing the pressure in two steps, separating the oil with a press under reduced pressure, boiling the deoiled solid and separating the objective juice from the boiled solution. CONSTITUTION:Fruits, vegetables, etc., containing various vitamins are immersed in hot oil and dehydrated (preferably to a water-content of about 10%) by evacuating the system in two steps, i.e. slight evacuation followed by the intensive evacuation. Most part of the oil is separated with a press under reduced pressure (preferably to a residual oil content of 7-8%) and preferably the oil is removed e.g. with a solvent to a residual oil content of about 1%. The remaining solid is boiled and the objective juice is obtained from the resultant solution. |
