PURPOSE:A tunnel type of continuous cooling unit is used, cut vegetables are conveyed with water stream, wrapped with polyethylene films whereby the vegetables are kept fresh for a long period of time without generation of bad smell. CONSTITUTION:Cut vegetables are sent from a washing tank to next washing tank by water stream and the cooling, after cutting and washing, is effected continuously in a tunnel type of continuous cooling unit where chilled air or water is used as a medium. Polyethylene films are used as a wrapping films and the cut pieces of vegetables are vacuum-packed. The vegetables are cooled down from 20 deg.C to 3 deg.C in 5min in the tunnel type cooler. |
