PURPOSE:To process potatoes into ones cookable by about 3-4min heating without causing shape collapse, by pretreating them in warm water under heating. CONSTITUTION:Potatoes which are peeled, optionally cut into a proper size, washed with water, are heated in warm water kept at 70-75 deg.C for about 3- 20min, then immediately cooled in cold water at <=20 deg.C, and cooled rapidly until the central temperature of potatoes becomes almost the same temperature as that of cooling water. The cooled potatoes are steamed in steam at 97-110 deg.C in a slightly hard state, precooled with water or air, air-dried with cold air or air at normal temperature, water on the surfaces of the potatoes is removed, and they are rapidly frozen, and preserved. |
