A water soluble chocolate extract is obtained by steam stripping aromatic constituents from a mixture of cocoa liquor, being the liquor obtained by grinding roasted and shelled cocoa beans and comprising cocoa butter and non-fat cocoa solids, and water, condensing the aromatic constituents, heating the stripped mixture to extract water-soluble constituents from the liquor, separating into a first residual sludge and a first aqueous phase containing the water-soluble constituents, and combining the aromatic constituents with the water-soluble constituents. The sludge may be mixed with further water and separated to recover more water-soluble constituents. The product may be dried to a solid. |
