PRODUCTION OF PROLIFERATION PROMOTING SUBSTANCE FOR BIFIDOBACTERIA

PURPOSE:Soybean whey is treated with a specific phosphate salt, filtered to remove remaining on the mesh to collect the titled substance of less contents of inorganic salts and aminoacids in a concentrated form. CONSTITUTION:Soybean milk resulting from extraction of soybeans with water is combined with phosphoric acid or hydrochloric acid to coagulate the proteins and the insoluble substances are filtered off. Then, the remaining supernatant (soybean whey) is neutralized with calcium hydroxide in the presence of calcium chloride under heating. The preciptates formed are filtered off and the remaining liquid phase is filtered with a membrane of more than 10% sucrose inhibition and less than 60% sodium chloride inhibition to collect the nonpermeating fraction. Thereby a substance promoting proliferation of a Bifidobacterium with only fresh sweetness substantially free from soybean smell.
