Hot air circulation baking oven - with evaporator in flue gas chamber designed as solid heat storage unit for steam generation

The oven includes an evaporator for the prodn. of steam which is passed into the baking space. The evaporator includes a heat storage section which is heated by the heat source for the hot circulating air. The steam generation can be adjusted by passing water through this section. The design obviates a separate expensive heating unit for the evaporator. The evaporator is of simple design and costs less to mfr. Its function is more reliable and it requires less maintenance and fewer expensive downtimes.
