PURPOSE:Sea weeds are heat-treated in a solution containing albumen, when necessary, further an alkali agent to make sea weeds keeping bright green color for a long period of time without deterioration in taste. CONSTITUTION:Sea weeds such as green laver is dipped in a treating solution containing albumen, when needed, an alkali agent such as sodium carbonate or sodium hydroxide to keep its pH at a level of 8.5-11.5. Then, they are heated and the pH of the system is adjusted to 8-10 after the heat treatment to make the objective sea weed product that can keep its color bright green for a long period of time. As albumen, that from raw eggs, or further frozen, concentrated or powdered eggs can be used. |
