PURPOSE:To obtain the titled hydrous food, capable of being sterilized and cooled continuously, resistant to preservation for a long term, and having a low viscosity, by incorporating a hydrous food with an enzymically treated chocolate component. CONSTITUTION:A hydrous food, e.g. foamable oil-in-water type emulsified oil or fat, and/or a raw material therefor and a chocolate component, e.g. cacao butter, brought into contact with an enzyme, e.g. alpha-amylase, in an aqueous system are incorporated to give the aimed hydrous food containing the chocolate component. |
