PURPOSE:To provide a safe defoaming agent for food and drink, having remarkably high defoaming effect, available at a low cost, and usable extremely advantageously in food and drink industry, fermentation industry, etc., by using a specific saturated fatty acid triglyceride and an alcohol as active components. CONSTITUTION:The objective defoaming agent contains (A) one or more kinds of 6-12C saturated fatty acid triglycerides such as fractionated coconut oil or a triglyceride of mixed fatty acid comprising caprylic acid and capric acid and (B) one or more kinds of alcohols selected from ethanol and propylene glycol as active components. The ratio of the saturated fatty acid triglyceride to the sum of (A) and (B) is about 0.1-50wt%, preferably about 0.5-10wt%. If necessary, a surfactant such as sucrose fatty acid ester, a flavor or a colorant, etc., are added to the agent. |
