PURPOSE:To prepare AMA-ZAKE (sweet drink made from fermented rice) preventing reduction in quality resulting from pollution with various germs, coloring, etc., by treating a stock solution of finely divided AMA-ZAKE obtained from rice KOJI and water with different enzymes so that two-stage liquefying- saccharifying treatment is carried out, deactivating the enzymes used, sterilizing it. CONSTITUTION:Rice KOJI made from rice having polish degree close to that of unpolished rice is blended with water, and crushed, namely, ground. A stock solution of finely divided AMA-ZAKE containing semisolid rice KOJI thus ground is treated with an enzyme to carry out liquefying-saccharifying treatment consisting essentially of liquefaction, and the used enzyme is deactivated. The stock solution is treated with another enzyme to carry out liquefying-saccharifying treatment consisting essentially of saccharification, the used enzyme is deactivated again, and the stock solution is sterilized to give the desired AMA- ZAKE. |
