PURPOSE:To obtain a processed food having good taste and flavor, by blending specifically treated Lentinus edodes with sesame-containing Miso (fermented bean paste) kneaded with mustard. CONSTITUTION:Lentinus edodes is immersed in water for a long time, returned from a dry state, washed, put in a pan, heated, and boiled down. Soy sauce and sugar as a sweetener are added to the pan, and Lentinus edodes is boiled down to remove harshness. When the stock is reduced, a fire is changed into a middle fire, sugar and soy sauce are further added to it, it is boiled, harshness is removed, the fire is changed into a low fire. As sugar and soy sauce are added and harshness is removed, it is boiled. When the stock is concentrated to dryness, Lentinus edodes is fully impregnated with the taste, the fire is changed into a low fire. As it is blended with Guninea pepper and cut sea tangle, it is boiled, further additionally seasoned with sugar. When the stock is concentrated to dryness, the fire is stopped, Lentinus edodes is cooled. Miso, Sake, and sugar as a sweetener are well kneaded in another pan, and kneaded further by a middle fire to give a blend. The seasoned Lentinus edodes is mixed with the blend, fully kneaded with mustard and ground sesame. |
