PURPOSE:To obtain bonded meat free of disagreeable smell, having high bond strength and resistant to separation even at normal temperature or high temperature, by adding a small amount of an alkali agent to powdery serum, applying the resultant powdery binder to meat scraps or meat pieces and pressing the meat in a container. CONSTITUTION:Powdery serum composed mainly of liquid serum in blood (preferably bovine blood) is added with a small amount of (preferably 1-3wt%) alkali agent (e.g. calcium hydroxide) to obtain a powdery binder for animal protein. The agent is applied to the scraps or pieces of meat such as beef, fish meat, etc., and the meat is pressed in a vessel to effect the bonding of meat scraps, etc. |
