发明名称 PRODUCTION OF FRUCTO-OLIGOSACCHARIDE USING IMMOBILIZED MICROBIAL CELL
摘要 PURPOSE:To convert sucrose to fructo-oligosaccharide which is a sweetener for health foods, continuously, by using a particular immobilized active bacterial cell prepared from the cultured liquid of a microbial strain belonging to Aureobasidium genus. CONSTITUTION:Microbial cells having fructosyl transferase activity are immobilized with (A) beta-1, 3-1, 6-glucan obtained from the cultured liquid of a strain belonging to Aureobasidium genus (e.g. FERM-P No.4257, ATCC No.20524 strain) and (B) aluminum sulfate or other aluminum compounds, and the immobilized cells are used for the conversion of sucrose to an inuline-type fructo-oligosaccharide composed mainly of 1-kestose and nystose having a structure corresponding to sucrose added with 1-3 fructose groups. Inuline-type sructo-oligosaccharide is a sweetener existing in onion, leek, girasol, oats, etc.
