PURPOSE:To provide the titled clathrate compound having suppressed odor and acidification tendency, soluble and emulsifiable in water, and convenient to be taken continuously as a food or drink, by including eicosapentaenoic acid in gamma-cyclodextrin. CONSTITUTION:The objective eicosapentaenoic acid gamma-cyclodextrin clathrate compound containing about 20-50% eicosapentaenoic acid is prepared by including eicosapentaenoic acid in gamma-cyclodextrin in aqueous system. Although eicosapentaenoic acid has excellent effects such as prevention of arteriosclerosis, etc., however, it has characteristic smell, and is extremely susceptible to acidification and free from stability. The defects can be eliminated by converting eicosapentaenoic acid to the clathrate compound with gamma-cyclodextrin, and an eicosapentaenoic acid composition takable for a long period can be prepared. The clathrate compound can be taken as it is or it may be utilized in the form of granules, tablets, etc. after drying and pulverization, or enriched with other minerals, vitamins, etc. |
