发明名称 EXTRACT FOR COOKED BEANS
摘要 PURPOSE:An alkali agent which shows a specified pH is added to shorten immersion time for removing harshness, further soften skins of the beans very well. CONSTITUTION:The essence for making boiled beans is combined with an alkali agent which keeps the essence 9.5-10.5pH. As preferable alkali agents to be used, are mentioned sodium sesquicarbonate, sodium carbonate and sodium bicarbonate. When the essence is used for cooking beans, 1-3g of the essence is preferably added to 1l of soybeans for soaking. When boiled 1l of the beans are preferably combined with 3-5g of the essence. The essence if basically composed of sodium sesquicarbonate or sodium carbonate and sodium bicarbonate and preferably containing other carbonates such as calcium carbonate and magnesium carbonate to remove bad smell of soybeans and ADZUKI beans.
