PREPARATION OF ALCOHOL USING KILLER ALCOHOL YEAST

PURPOSE:To prepare an alcohol with preventing contamination by wild yeast, by cultivating Saccharomyces cerevisiae K2-M111 strain having killer activity in a saccharide solution. CONSTITUTION:An alcohol yeast and K2 killer yeast are subjected to cell fusion to prepare Saccharomyces cerevisiae K2-M111 strain (FERM-P7071). A saccharide solution is fermented by the yeast, so that an alcohol is prepared with preventing contamination caused by wild yeast.
