PURPOSE:Boiled noodles are sterilized by dipping in edible oil heated at a certain temperature and packed in sealed bags, thus producing noddles keepable for long time, especially used for ''chang pong'', a Chinese-style hotchpotch originating in Nagasaki. CONSTITUTION:Boiled noodles, e.g., for chang pong, after the water is removed, are dipped in edible oil, such as soybean, cotton seed or corn oil, which is kept to a temperature of 95+ or -10 deg.C for sterilization, and packed in sealed pouches. |
