摘要 The material for extraction is extracted with physiologically acceptable fat or fat-like solvents in the presence of water. This is carried out in a closed pressure vessel at elevated temperature. The amount of water must be such that the water activity corresponds to a aw value of not less than 0.5. By suitable choice of the aw value it is possible to control the process in such a way that the flavour develops in the direction of a boiled flavour or in the direction of a roast flavour. The resulting flavour concentrate can be used as a semi-finished product in the manufacture of sauces, soups, seasoning mixes and the like or can be sold as a finished product. The material which has been subjected to the extraction process is in general completely tasteless.
