PURPOSE:To obtain a food having the crispiness of potato chips, by slicing carrot, potato, etc. to thin slices of proper thickness, heating and freezing the slices, and frying in frozen state. CONSTITUTION:Raw potato is sliced to a thickness of about 2mm., heated at 90- 100 deg.C with steam or hot water, and frozen at <=-10 deg.C. The frozen potato is fried in oil without thawing to obtain the objective processed food. |
