PURPOSE:To prepare processed meat of animal, poultry or whale having improved taste and palatability, by rapidly heating and stirring the raw meat. CONSTITUTION:Raw meat of animal, poultry or whale is preferably added with 30-100W/W%, based on the meat, of a liquid containing a seasoning, and stirred and beaten in a stirrer (preferably at about 300-700rpm and acceleration of 2-5G) to obtain the processed meat. The processed meat may be frozen quickly. EFFECT:Even the meat of the waste-grade having poor quality can be improved to have the same quality as a high-grade meat. |
