PURPOSE:A sweet jelly that is made by coating a formed soft candy with jelly and converting the soft candy into paste with time, thus giving soft texture and good taste. CONSTITUTION:A soft candy is coated with jelly and converted into paste with time. When the activity of water in the soft candy is smaller than that in the jelly, the water in jelly seems to migrate into the soft candy and the soft candy that has been solid, when it is prepared, changes into paste by absorbing water from the jelly. Jelly loses its water, however, it keeps the texture of hard jelly and the paste of the soft candy can keep its original color and shape in the jelly. It takes 2-3 weeks at room temperature to cause the change with time. |
