The invention relates to a process and plant for deodorising and/or deacidifying high-boiling organic compounds, in particular edible oils, esters and/or high-molecular hydrocarbons, the liquid to be deodorised and/or be deacidified being applied at reduced pressure as a falling film on to a falling-film evaporator having vertical flow channels, and a carrier vapour of low molecular weight, for example steam, being passed in counter-current to the liquid phase through the falling-film evaporator. The process is characterised in that the liquid, prior to being fed into the counter-current falling-film evaporator (10) after main stage (11), is partially deacidified and/or deodorised at reduced pressure in a parallel-flow falling-film evaporator (8) of the first stage (9) by evaporating flavour substances, in particular fatty acid, and/or odour substances and that the vapour, possibly containing small quantities of liquid, from the first stage (9) is passed in parallel flow with the carrier vapour leaving the falling film evaporator (10) of the main stage (11) through an intermediate vessel (6). <IMAGE>
