PURPOSE:To quantitatively evaluate the ageing degree of the alcoholic liquors, by calculating the peak width of the OH-group of water in the nuclear magnetic resonance spectrum of an oxygen nucleus. CONSTITUTION:When NMR spectra of oxygen nuclei (<17>O) of various alcoholic liquors different in an ageing degree are measured, the peak width (line width) of the OH-group of water in each <17>O.NMR spectrum becomes narrow with the advance of ageing. From the aspect of this fact, an <17>O.NMR spectrum is measured to calculate the peak width of the OH group of water in said spectrum to perform the evaluation of the ageing degree of each of alcoholic liquors. In brandy, the line width of the OH-group of water is 122Hz in an aged one as compared with 170Hz in newly brewed one. |
