PURPOSE:To obtain a health food by slicing KONJAK (paste made from the starch of Devil's tongue) or mannan gel to a proper shape, frying the slice under reduced pressure, and removing the oil from the fried product by centrifugal se paration or solvent extraction. CONSTITUTION:KONJAK or mannan gel is sliced to a proper shape, and fried at 80-140 deg.C under reduced pressure of <=100Torr. The fried mannan chips are deoiled by the centrifugal separation in a hot air atmosphere or by the extraction with an organic solvent. A health food suitable as a snack food can be prepared by this process. |
