The process for isolating bitter principles from gentian roots is characterised in that the starting material used is a residue obtained as waste product from distillation of gentian spirit. Solids and mucilaginous materials are mechanically removed from this residue by screening and/or centrifugation, the remaining solution is concentrated, and the resulting concentrate is further processed either to an essence or to a dry material. The bitter principles prepared according to the invention are outstandingly suitable for use in bitter beverages. |
