<p>PURPOSE:To prepare a fruit liquor having rich fragrance and high extract content, without adding sugar nor concentrating with heat, by using concentrated fruit juice having increased sugar content and obtained by the freeze concentration of fruit juice, as the raw material. CONSTITUTION:A concentrated fruit juice having a sugar concentration of 15 deg.- 30 deg. BX and containing concentrated fragrant components, sugars, proteins, vitamins, minerals, etc., is prepared by the freeze-concentration of a fruit juice. The objective fruit liquor is produced by brewing the concentrated fruit juice with with yeast by conventional process.</p> |
