PURPOSE:To provide a novel seasoned bean curd having the pudding-like texture, by dissolving a seasoning base such as sweetener, e.g. sugar, etc. in hot soya milk made from soybean, cooling the solution, adding a coagulant for bean curd dissolved in chilled water, sealing the mixture in a packaging container, and heating and quenching the content. CONSTITUTION:A seasoning base such as sweetener, etc. e.g. sugar, etc. is dissolved in hot soya milk made from soybean by conventional method. The obtained solution is cooled to <=20 deg.C, preferably 5-10 deg.C, and mixed with a coagulant for bean curd (e.g. gluconodelta-lactone) dissolved in chilled water. The mixture is sealed in a container, heated at a high temperature and quenched to obtain the objective seasoned bean curd. Fruits or other edible solid materials may be put into the container prior to the filling of the container with the mixed soya milk. |
